There are many placed beehives, but there could be an NPC guy who making them and take care of the bees. He can be a traveler, or just a new "Situation" adding the beekeeper shop to the other merchants.

Also honey is not really expiring in real life. Can we remove the expiration on honey? or an ability to store in a jar?
Also there is not too much honey products in the game, but wax was invented really early and used in many ways in households in the middle age.
The beekeeper could sell candles, wax, honey, healing salves, deathstinger in jar, beekeeper helmet (which reduces the dmg against hornets and bees), smoke bombs, herbs.
Maybe! Just maybe a caravan update beehive? Think about it 🙂
