When you click on Stats, it should open "the regular" one. There's only one built-in stats page. I don't see the issue.

In fact there are 2 stats pages on anki (native, obv). The "new" one with the "new" UI that opens normally, and the old one by holding shift when clicking on stats

Excellent point. It's been so long since I haven't had a Stats-related add-on that I'd forgotten there's something there. 😅
But still -- you can only get to one of them by (simply) clicking Stats.

The More Overview Stats 2.1 add-on adds a table to the page you see after clicking on a deck, it does not change what shows up in the stats page, neither the old one (with Shift) nor the new one.

Progress Graphs and Stats for Learned and Matured Cards is the only one in that screenshot that looks like it's affecting the stats page. The old one, reachable with Shift+T (or holding Shift while clicking on the Stats button, I'm just a keyboard person).
Oh, right, the FSRS Helper also does something to the old stats page.

That will probably be conflicting with FSRS Helper, which has its own Shift-Stats page. That's could be the reason why this hasn't been working well for you. Time to clean up your add-ons!

Agreed, that sounds like it could be the case, I know that the FSRS Helper stats collided with another add-on I used to have that replaced the same table. (Some add-ons also misbehave if the stats page takes too long to load)
