i feel like what im doing is too grindy and there has gotta be a better way lol

Normal difficulty nether, ignoring chests and just finishing the events fast is good. Court still feels slow even when you finish plat with 5 minutes on the timer.

But grinding that out is aids so I just did a nether with friends every few days and eventually got it done.

^ also grab the resource nodes and picking up the black orbs that spawn from killing ads.

all will give you xp as well
