the normal version is fairly easy in terms of light level dificulty.

the difference between eager edge and enhanced eager edge is very miniscule. the most noticeable part is you having more time to activate the effect
i would just grind dares until you get a single sword with eager edge, doesnt matter if its a red border, doesnt matter if the other perks are bad.
as long as it has eager edge, it will serve you fine for whatever you are going to use an eager edge sword for (aka movement)
