Platinum anything (with the exception of Coil and a few other Seasonals) just requires you to kill all Champs. If there's no champions you can skip whatever

By doing the skip, you skip an unstop champion and barrier champion

I'd wager no. The game probably goes through a check and asks if the player killed X amount of champions to achieve platinum and if you didn't kill the correct amount it'll give Gold instead.
