While barrier is up they regenerate, so you have to shoot the barrier with an anti-barrier weapon until it breaks and stuns them

When barrier champions reach a certain health threshold, they deploy a shield around themselves, making them immune to all damage except for anti-barrier options.
While the shield is up, the regenerate their health, healing to full or near full if left alone for the full duration
Damaging the shield with anti-barrier weapons will prevent the health regeneration. Fully destroying the shield will stun the champion for a little bit.
The best course of action against them is to have your weapon fully ready and loaded when the barrier comes up. Having to reload takes too much time and will let them regenerate.
Check the tab in your inventory for the triangular marker for anti-barrier effects. Additionally, check your seasonal artifact for any mods that enable weapons to damage barriers
Lastly, certain exotic armor and weapons have anti-barrier properties or add them to existing abilities. These won't be listed on that tab, but have the same triangular marking on their descriptions

Not armor mods, once you unlock them in your seasonal artifact, they are automatically applied
Also you can use guns like arbalest which have intrinsic anti barrier
