Bungie introduced sunsetting with beyond light as a way to get people to use new guns/builds/etc.
as such most items pre- season of dawn and from season of dawn (Launch- March 2020) were not able to be infused any further at the end of season of the chosen (May 2021).
The meta in PVE and PVP had been super stagnant and to get people to use new stuff it would have to be outrageously better than what we already had, so this gave items a shelf life to be good and then be rotated out.
Then after season of the chosen they reverted this idea and did not sunset new items, but kept what had already been sunset gone.
Honestly though, we are incredibly more powerful now so you're way better off acquiring new items than relying on your old sunset gear anyway.

you can transmog any piece of legendary armor to make it look like a different piece of legendary armor
you could make your new stuff look like your old set while getting better stats

open your inventory, hit "s" or down on the d-pad to go to where your ship and sparrow are. click appearance customization on the right side. click the gear category you want to transmog,
let's say helmet. hover over the ornament slot, not the shader slot. this should show you all acquired ornaments and also all the gear that you have that can be turned into ornaments.
you'll have a currency for each class, and some general ones that can only be bought at eververse. go to ada to do synthweave bounties to collect more. you can get 10 unlocks per character per season.
hover of the piece you want to transmog, hold the button it tells you to use to unlock it, and you should now be able to put that legendary ornament on any legendary armor
