There are some challenges in Triumphs that mention what exactly you need to do but there are others (like "Illuminated Torment" and "Crossfire") that don't. How do I know what I need to do to complete them?

Those will become available on a week to week basis, you can’t complete them now.

Like if you click on other raids, challenges for them will be active there. Then find your favorite YouTuber or Reddit to find out what is actually needed.
