For the gjallahorn catalyst, if i open chests in the dungeon but leave without collecting all of them, do i have to grab all of them again if i restart? also once i get the three of them do i need to complete it?

I don't know about the first part but after you get the 3 chest you should've been given the catalyst and then you can just leave but the you have to kill about 400 combatants to complete the catalyst

yes, they all 3 must be done in 1 go.

if you get 1 then leave, when you come back then progress is reset.

you do NOT need to complete the dungeon though. Once the third chest is opened and you have the cata, you can bounce then unless you want to clear boss for drops.
