I’ve farmed pit more than 60 times since Tuesday, and I was wondering, after you got your desired stats, there’s no point for you to farm Pit every again, since you got all your necessary stats… At that point

it’s just farm other activities like KF for this week, for example, in order to get high stat amour pieces with good spikes?? It’s more for whichever armour you like the look of, and then farm that armour, right?

The stats are all that matter. Once you have all the armor pieces you want you're pretty much set for armor. You can always change the looks with Transmog (They call it Armor Synthesis).
For that you just need to get a piece once, then you can turn it into an ornament that you can put on any other armor piece e.g your high stat armor. It's a little restrictive in that you can only get 10 Bounties from Ada each season per character
The true true endgame is getting good stats on all the exotics you use, but that can be very time consuming right now with the ever increasing number of Exotics and how Legend Lost sectors are set up. But at least getting decent rolls for them is worth doing
Additionally if you havent seen it, Elemental Affinity is getting removed from Armor in Lightfall, so that also cuts down on the number of pieces you need

Yeah Exotics get stats just like Legendary Armor. Only difference is the max amount of stats for Legendary is 68 and for Exotics 70. Also some Exotics have stat minimums based off of their perk.
For example Contraverse Hold is guaranteed to have a decent amount of Discipline because its all about Grenades. Its either minium 10 or 20, cant remember
Best way to farm specific ones is Legend Lost Sectors, they drop Exotics in a specific slot (e.g. helmet) each day, rotating. For just volume of drops Grandmasters in general and especially on double loot week are best.
But in GMs you can get any exotic so its nearly impossible to farm a specific one
If youre just looking to unlock them all, Legend lost sectors are guaranteed to only drop ones you dont have yet until youve unlocked all the exotics in the specific slot that day
