Just wondering what content I should be using? What exactly is gambit? And what is the role of dungeons? Are they worth doing?

you could actually search those questions on youtube, and several tutorials will appear for u. everything is worth doing if you're doing it right.
yeah "destiny recipes" are helpful, search it and connect ur acc. it will show what you lack, etc.

Long explanation ahead! I feel like typing today
First: destiny has some power caps. Right now, you are able to get to 1570 with powerful gear and 1580 with pinnacle gear
Powerful items will be either prime engrams, that drop randomly, or whatever activity that shows it drops powerful gear. Pinnacle is what says its pinnacle
Either will help you increase your power, of course, but you don't need to do only activities that will give you pinnacle because you aren't 1570
I personally would do the the strikes, crucible and gambit while doing bounties for them - 8 bounties (I think it's 8) from the tower vendors (gunsmith, zavala, drifter, shax) will give you a powerful. 3 strikes with the subclass of the day, 3 crucible matches and 3 gambit matches give you pinnacle.
You can find a list of everything online, or you can hover over your map and look at everything that has a golden icon. It will tell you if it drops powerful or pinnacle and what you need to do for it
Lastly: your drops will always consider that characters max possible power, so you should try doing as much as you can in one char before going to the others. Although I would really do whatever I have more fun with, sometimes swapping characters isn't the most efficient way but is the most fun and that's fine
It also means that if your max power is 1557 and, say, your helmet is 1560, powerfuls and pinnacles might drop at 1558. It uses your average, not gear by gear
And Gambit is a game mode where you kill adds, grab the motes they drop then bank them in the middle of the map. From time to time someone can invade the enemy map and try to kill people to delay their mote gathering. When you fill your bank, you summon a boss and the first team to kill the boss wins. The boss is invulnerable until you kill a couple of wizards that will show on the map.
So basically kill adds, bank motes, kill invaders when they show up, kill wizards, kill boss.
I would recommend using the "freelance" option (right above the gambit icon) so everyone will be solo, unless you yourself have a team already
