Made this last night.

Applied some cooking oil to chicken and seasoned with salt and lemon pepper.

Seared the chicken on both sides in a hot, dry casserole dish for a few minutes, on medium heat- take out and leave to one side.
(If its sticking and you cant flip it, wait a little longer, once it seared properly it should release easily) -
Added mushrooms and slowly caramelized with butter till nice and brown and starting to crisp up - take out and leave to the side

Fried off onion, paprika and garlic for a few minutes.

Added 2dl of uncooked rice and browned.

Put back in the mushrooms and chicken

Add 4dl of chicken stock

Add 1dl Cream

Put lid on and bubble away on medium-low heat, occasionally stirring for 20-25 mins or until most of the liquid has been absorbed by the rice.

Added a bit of extra cream and seasoned to taste with salt, pepper and chili flakes. Let it cook for a few more minutes still it started to thicken up.
-Dish up Garnish with some chopped spring onions.
I thought I messed it up at one point as it was looking really too loose (see the other image) but it turned out amazing and was really tasty ๐ ๐
