Notice that the next item arrived 1 minute after collecting the items. See section 5.2 below for proof using Hatching.
To summarize:
For gold, as long as you collect BEFORE 9h20m (8h + 1h20m), the next item will drop at 9h20m
For food, as long as you collect BEFORE 10h (8h + 2h), the next item will drop at 10h
For breed /hatch, as long as you collect BEFORE 16h (8h + 8h), the next item will drop at 16h
Just to drive the point home, as long as you collect at 9h19min for gold, or 9h59min for food or 15h59min for breed/hatch, the timer for the next item drop will NOT change and you will get the next item at 9h20m, 10h, and 16h respectively.
To put it another way, collecting at 8hr intervals is good practice. But if you need to, you can actually wait 9h19min before next collection before getting back on schedule and collect 6h1min after that.
Why am I stressing this point?
I know that there are those who set alarms for this game and I'm telling you that you can do a collection before bed and sleep for 9h19m and do a collection right before the next item drop 1min later.
Or maybe your last breed / hatch collection was 4hrs ago and you're heading to bed and are worried about losing a breed / hatch item in the middle of the night. Don't worry, you have 12 more hours before the next breed / hatch item drop. Be more concerned about the gold and food drop times.

Eg, gold first item cost 1 gem, 2nd gold cost 2 gems, 3rd gold cost you 4gems. After doing that the cost for skipping entire node has been reduced by less than 7 gems

Think of the 29 gold items total, each one has an increasing cost. Collecting items in game removes the very expensive ones, gemming an item removes the cheapest
