So we basically got confirmation there were punnet squares in the game, if you dont know what that is, the picture shows what it is below, anyway heres some ideas.
1.Multi colored dinosaurs
Lets say a female T Rex is brown, and a male rex is green, their offspring might be brown and green, incomplete dominance.
2.Calico dinos
Okay maybe not calico, but something similar. Female cats are the only cats that can be calico, due to the Y chromosome making cats one color, what if we had this on certain dinosaurs? Like female Utahraptors could have a blotchy pattern like calico cats
3.Pigmentation mutations
Random chance for dinos to be leucistic, melanistic, or albino, could be cool.
And have some offspring be carriers for it.
