Basically, how this glitch works is through Super Circuit's frame rate. When you clip into the wall, the game gets tricked and believes you have done a full lap between frames and so counts you as completing a lap

Basically, what happens is that in SC, when you hit some obstacles (like the Mousers), you get put into a state where you constantly drive forward but have no control of direction until you eventually spin out. In the Super Circuit, they do this and then jump into the wall. Every time they bounce when positioned in the wall, the game's frame rate assumes you have completed a lap and therefore just ends the race there and then
