i think it would be quite cool if servers players could choose the color of the interface

personally I disagree with servers being able to set this on the basis of familiarity and accessibility (it might look fine for the server owner but it won't be suitable for some players), HOWEVER I think that being able to customise the UI theming as an individual user would be incredibly cool!

With your examples, I think that the individual item and background colours should be separately customisable, as well as the catalog bar background. The hotbar should also be set as a separate colour for contrast.

having any user-side things inherit the server makes it confusing to separate the game from individual worlds / servers imo
which is also why I think colour palletes should be clientside, or at minimum allow the client to use their own if the server permits (which they should by default), as there are good use-cases for a server-side pallete, such as specific themed builds or colour-restriction challenges

maybe if you want the best of both worlds, there could be a prompt on joining a server like "This server has its own UI theme. Would you like to apply it?"
and then an option in the settings for "Server-side UI themes" or something, with options like "Always Ignore", "Always Prompt", and "Always Accept"

in that you can have your own, but servers can also recommend their own for you to apply
