I didn't really realize I was going to need a bachelor's and it only recently dawned on me. All's not lost, I enjoy learning and my job could be worse pay-wise (culture and work wise it's terrible but whatever). Is my best bet an internship? When's the best time for those? Could I work my way into support or networking/cybersecurity in the meantime? What I ultimately want to do is Software Engineering (likely backend or embedded, maybe even devops). I just really want out of my current job and into something in the industry and im lost in a sea of job titles in this job market.

We're missing some background: what is your current experience? What is your associates in? What is your current job? Are you going to pursue a bachelor's full-time?

If you can afford school full time, then focus on learning and building projects in your free time. It's a good way to figure out what you can do well and what you like.

Since the main goal is getting into the industry, you could consider going after mainstream roles, like backend dev, devops and data engineer. Check job description of roles that would be available for you (local or remote) and try to build something on the most popular stacks. Try to get in touch with people in similar roles (LinkedIn) and ask about how their daily job looks like and advice on topics to learn.

Not embedded, because it's a smaller market. Not cybersecurity because that's an advanced topic you could work towards after a few years of experience.

IT support is maybe a better job than gas station. You could try if you would get interviews with the associates, especially if you have to work besides doing your bachelor's.
