Leaving a job in 6 months isn’t a big deal but you shouldn’t make a habit of it. As far as your second concern about stability what makes you think the new job won’t be stable?

I had a similar sentiment after ~1yr or so in my first job, to the point where I did find something coming out of left field on the Jira board and just took that ticket for the hell of it. I think I got a lot of fulfillment out of putting on another hat, and I got some resume clout from it, but I did ultimately leave as soon as I got an offer elsewhere that I felt good accepting.

If you feel like you're not growing or you're about to stagnate, then you have to take charge and do something about it. If your current employer won't give you a counter-offer, that honestly gives me the impression that they don't value you. If you pursue opportunities for growth in your current job and they won't give them to you, then that's another red flag and I'd be taking the new offer, submitting your resignation letter, and not turn back.
