I have a pair of Linkind A21 RGBTW Matter-over-wifi bulbs that added to HA just fine, but insist on being bright blue instead of white, whenever they are turned on by HA. They can be set subsequently to any color, but they always come on with that color. I'm wondering if anyone knows why that my be, because I'm stymied. There's nothing in the manual or in any online forums I can find about it.

My ZigBee lights have a setting for what to do when powered on, which I set to "resume last state", maybe there a similar setting for yours that can be reconfigured...
You could also use a predefines scene and set the automation that turns it on to use that scene instead of just turning it on without setting a color
