I have the official Roborock map, however when I attempt to add it to my Dashboard all I see is this (see attached). And I have to click to open the map. Is it not possible to show it without clicking?

With some custom stuff (https://github.com/Lash-L/RoborockCustomMap and https://github.com/PiotrMachowski/lovelace-xiaomi-vacuum-map-card) and some tinkering, you can also get an interactive map.

Do you know if it is possible to remove the bottom text?

Yes. Disable the "Show name" and "Show state" options.
