Hi, i have a MG24 as coordinator connected via USB to my HA.
Now i want to add a dongle-m as a (repeater) Router for extending my Signal via Ethernet.
Is there a Step by Step Manual?

You would need to flash the correct router firmware onto whatetever a dongle-m is and enroll it into your zigbee mesh just like any other zigbee device.

I guess that there is alreade router firmware because i can choose between router and coordinator mode.

ok i have to reorder my question. I have now the dongle-m connected to my HA as Router. The LQI is really weak, so i want to have the dongle-m connected as router via Ethernet that it has got highest LQI to provide.

zigbee cannot be "repeated" over ethernet

zigbee repeaters/routers work only on wireless signals.

(there are some devices that work as zigbee repeaters that can run off power-over-ethernet, but when set up as repeaters they only use ethernet for power, not for data)
