I know very little technically about the Matter protocol. I have numerous TP-Link switches (S505s, mostly)
by Tapo. When using their app, it's possible to set an per-switch option that controls how the LED in the switch functions. Is there any chance something like this is supported via Matter?

I normally don't have these switches Internet access, which is required for the Tapo app to work. But I would love to be able to automate when these LEDs are on or off.

It can be done. Inovelli white switches do exactly this today. Tapo would have to expose the LED as a separate controllable light cluster from the load/light cluster the actual paddle controls.

as opposed to some other property that could be set on an existing matter device.

Not exactly. One code and the Matter firmware of the switch exposes 2 lights to the matter controller. I is the LED and the other is the whatever you connect via the wiring.
