Any recommendations for a matter-enabled sensor that will report on water usage? It would be awesome to be able to know water flow by the minute.

Are you looking for whole house consumption? If so can you just read the water meter?

Not in real-time. And not easily. Strange I know, but I think my meter is 600 some feet away (direct line) across several plots of land that are not mine.

My water supplier has provided me with access to "Smart Water", but that's not real time as far as I can tell.

Yeah that won't be. If it's wmbus though you can read it wirelessly as it broadcasts it's readings - lora is harder.

I don't know of a decent standalone smart meter that could handle a whole house flow - most are good for like.. A single hose or tap

No idea what tech it's using.

As a side comment about "not real time", when the rolled out Water Smart to us, it showed I had not used any water in 8 months. The "fixed" it, and now it shows I've used 31,000 gallons in one day.
