Where do I find the option to set the temperature? I can only find the option to either turn off or to heat.

There is a Climate 'Set target temperature' option and you then select the applicable entities (devices)

Does this explicity set a fix Thermostat Temperature (the number you see on it) or is it controlling the thermostat to achieve a specific temperature at a specific point (temperature sensor)
I just want the automation the set the thermostat at a specific value cause I have a good feeling now how warm it's gonna get, after what time, with what value and my set off set temperature. I don't want my automation to fluctuate the thermostat the whole time to reach a target

It will depending on thermostat mode look to maintain at the set temperature and trigger heating on / off

you mean the HVAC mode? So if i leave it to "heat" it will just heat but if i turn it to "auto" for example it might turn off when it gets to hot?

Not 100% with Eve.
With Hive by having it set as Auto uses the schedule within Hive, Heat is equivalent to Manual (find this is the best) - below temp will trigger heating On and Off when reached.
