I have one integration (Deako) that exposes all of it's entities as lights, however, I am using it also for a couple of exhaust fans. Is there a way to change specific entities from light to fan? Effectively, I want the "Change device type of a switch" helper for a light.

you could use a fan template helper. use a template to get the state of the light entity and set its actions to be turning the light on/off.
e.g. something like this:
