They are mid change over in their lines and it looks like it may be being discontinued but it seems to be hanging around a little longer then other stuff they are discontinuing so who knows.

It is not Zigbee. That is from their newer range which is Matter over Thread.

I don't think so, some of the new devices do seem to have an undocumented ZigBee mode but that sensor is not one of them.

They seem to moving fully over to thread devices and discontinuing the ZigBee ones.

for humidity? sonoff make a zigbee humidity sensor I believe.
I don't really do a lot with humidity tbh. I have some sensors built into my presence sensors on the Everything Presence One but that is wifi and wired.

No direct experience with it but Apollo make the AIR-1 which is an ESP Based wifi air quality sensor that you could look at.

I would go for something ESPHome based as its easier to integrate into Home Assistant. Although you could probably get ESPhome running on the above too.
