I have pretty much every device on an area. I have seen screenshots floating around showing it but I can't find an option to enable this.

i assume they made a template helper that added all the energy of devices in an area together and then made the items dependencies of that

No, it's automatic.
Only if you don't use the device hierarchy though. If you have upstream/hierarchy devices, sankey defaults to that view, instead of the per-area view.

In a manual dashboard yes with a yaml option, in the default energy dashboard no.
