Firstly... I would be very careful attaching anything electrical to a propane tank for obvious reasons...
I imagine that that the current meter is basically just a pressure sensor?
You could check its rating and then look for a pressure sensor that meets the spec and can be integrated in some way.
Perhaps you could just point a camera at the current solution then have something analyse the images and update a sensor?
I'm hoping for something that is specifically designed for propane tanks.
There is Mopeka which has an integration and has some devices that may do what you want. looks like they are BLE so you might need to set up a BT proxy at the edge of the house closest to the rank for ideal signal.

Yeah, I have seen camera/ocr used for a few different meters/gauges.
