What's a good weather Station to use with HA, that allows me to put temp readers in every room and log the data?

For room temperatures you don't need a station per se to log the data. Any temp sensors that work with you desired protocol can do that

Which protocol do you run? Wifi? Zigbee? Z-Wave? Etc?

Make sure to buy some that come with a power supply and not battery then

I want to keep then on power anyways, so I found one that has an usbc power connection
