I understand that it can only exist 1 coordinator per network but I would like to setup 2 networks with 2 different coordinators. The first one is set and functionnal. Then I tried adding the second one by clicking "add hub", connecting to the coordinator using socket://xxx.xxx.xxx.xxx:8888 but then, I get prompt to migrate my existing network to the new coordinator... Any idea ?

It's pretty simple - ZHA on one home assistant host does not support multiple zigbee networks.

your options are either to use a second HA host for the second zigbee network, or to use the zigbee2mqtt external add-on for the second zigbee network.

Just reporting my experience: I installed zigbee2mqtt twice, so that each instance could have its own coordinator and network

Fwiw, the SLZB-06M has a router mode that makes it act as a repeater. Will be testing this functionality soon. But it removes the requirement of having 2 mqtt servers assuming you don't NEED separate zigbee networks
