I'm looking at doing a home assistant node with a satellite link to another node, it'll have the sat link, dashboard, integration for switch bot and smart plugs, dashboard, local bin collection and that thing that has like an image of a house on your dashboard that gets it's lights lit up or not depending if your in or not

Would a Pi 3 with a 128gb SSD be ok to handle this?

I used a Pi 3 B+ for quite a while and it worked but when using it, you felt is was working really hard.

Add-Ons were also not working.

I now use a Pi 5 with 8GB RAM and it works wayy better.

What exactly does it need to run smoothly? Like minimum cores/ram/SSD?

It also needs to support UEFI if you want to run it bare metal but that's all in my link already.

My rpi3b (1GB ram) is struggling to keep up and I have to trim down what I run to keep it stable (and I still restart it every week or so, which seems to help). Recently some Add-ons crash it when updating, so I can't update them anymore. Would not recommend it if you can avoid it. I'll be migrating away from it soon
