I’d go with any 868mhz based system as it has better range than wifi and is generally more stable. Homematic is reliable and works directly in home assistant, some zigbee are sub GHz.
With homematic you need to check if your old switch covers fit, Shelly needs a bit more wiring / depth in the outlets and it can get tight

Are Palmat motors suitable for every shutter, or should I look for something to know which model is suitable for my shutter?
you have to look at the shutters itself. Plastic / aluminium / aluminium with foam inside / wood. They all have a different weight wich should be calculated for the right motor with the right amount of NewtonMeter
and the "wellendurchmesser" sechskantwelle (SW) 40 or 60 mm
what material are your shutters?
exeample: if your shutters are PVC, it counts as 4kg per square meter. Measure shutter and convert into the right m2
For Alu shutters it will be 7-10 kg per square meter.
If your shutters are WIDER than 3 meters, you'll need to calculate 6kg/m2 for PVC, and 10kg/m2 for aluminium

Normally, you dont need an adapter.
I have aluminium with foam inside, the right Wellendurchmesser ist mit nicht bekannt, the shutters are 2m X2 m ca.
check wellendurchmesser (normally 60) and go for 60SW 25KG

press button 5 times quickly, that forces zigbee mode. Otherwise access the AP that shelly sends out. In software you then can switch to zigbee.

nope
I had my shutters (4) running first on Tuya devices, but yes, switched later to HA so i wanted better integration. So i replaced the Tuya devices with Sonoff-Dual-R3 flashed with Tasmota (in shutter operation). That was running great as it could keep track of the exact position of the shutters. If i would open or close them manually a little bit, it knew the position. But keeping up with firmware updates is a headache with Tasmota, so later i switched to Shelly Plus2PM devices. Lacks the posotion memory but better integration with HA.
What i found important:
- Be sure that the manual wall switches still work for easy manual operation.
- My shutters have integrated end-stops, so timing is not important for complete closing or opening. Better too long than too short. This might be different if you don't have automatic end stop.
- I prefer WiFi (seperate Home Automation VLAN). Devices are powered by mains anyway and in my case more stable (good WiFi network 😜 ). Zigbee was not stable enough for me.
- Packing the devices behind your wall switches might be problematic. Choose for the small ones (Shelly-mini) if they can handle the load. In one case i made the decicion to connect two adjacent similar shutters to one Shelly, so removed 1 manual swith to create room for a Shelly. Operating the two shutters with one switch/device was no problem.
- Instead of trying to calculate the power usage of the motors try to measure with and AMPERE meter, or any other measuring device (every thutter separate if they differ in size). Then apply a healthy margin, and everything will be OK. It will be less than expected.....

you can try to flip the breaker (sicherungskasten, gruppe) for 10 seconds, then flip back on. then click your wall switch 5x (the one you use for physical up/down connected to shelly) Make shure to set Z2M in pairingmode first. That should work without opening the box in the wall
otherwise check the shelly integration and see if you can switch there from wifi to zigbee, dont know about that
before switching to zigbee, make shure you have done the calibration for the shelly. This is easier with wifi then with zigbee
It will keep the settings while changing
