Not sure where to start with getting into smart home things and the Ikea stuff looks pretty decent.
Would I need the Hub? or would something like a cheap zigbee dongle be more than enough?

no you dont need the ikea hub but the set up you do need depends on which ikea device you are looking at.
their hub has 2 seperate radios in it, so it can run both zigbee and thread.
some of their devices are zigbee and some (the newer range) are matter-over-thread.
you need to work out what the devices you are buying needs and then have that set up with HA. most(but not all) cheaper zigbee adaptors can be flashed to be zigbee or thread (as it uses the same hardware) but not both at the same time.

yes you can do this. you should have them spaced at least 25cm apart (use extension cables as needed)
I recommend the ZBT-2 for the radios but they are not the cheapest option.

yeah Ikea are branding their matter-over-thread devices as just "matter" which is confusing everyone. it only says thread if you delve into the manual.

also ive done some googling and it seems only the Tradfri stuff is zigbee

yeah, for lights Tradfri is their zigbee range
at least for now.
Ikea's branding is a bit all over the place at the moment. gotta gotta be sure to check.

also did a little more digging. some of their other non tradfri stuff is zigbee. since it says its compatible with the Tradfri gateway

I have no idea how well it works though, its not the direction I would go.

I have a ZBT-2 for ZigBee. If I wanted some thread devices I would probably get another.

home assistant can integrate with dirigera, sort of. dirigera acts as a thread border router, so home assistant can use it to access thread devices directly. dirigera acts as a matter bridge for zigbee devices it controls, and you can connect that to home assistant via the matter integration.
