I like that you are giving new users an opportunity to hit the ground running more easily, however, I do not like the lack of control that I the admin has over them. For example, my kids should not be able to see my camera feeds or control my Master bedroom lights, etc. I would like to be able to at least prevent users from accessing these. What can I do to stay up to date and block these dashboards?

Yeah user management/permissions are pretty poor in HA. You can only really tag as "Admin Only". You can set visibility on a per card basis.

Look at the conditions options, you can set condition by User.
