I have a bunch of smart plugs that are already hooked up in Apple Home (I have some AppleTVs that act as home hubs). I want to make those plugs accessible within HA, but I haven't found any obvious information on how to do that. Anyone got suggestions?

then re-expose them from HA to HomeKit with the HomeKit Bridge integration: https://www.home-assistant.io/integrations/homekit/

I have both of those already; I assume I have to forget them from the Apple Home for them to show up in the HomeKit Devices UI?

you need to follow the instructions under https://www.home-assistant.io/integrations/homekit_controller/ for your device type. There's specific steps that you need to follow in some cases to ensure the device is correctly removed from apple home and added to home assistant.
(for most devices you can remove from apple home, reset the device, and home assistant should discover it via bluetooth - if it's a thread device on an apple thread network, there's different steps you can follow that let the device stay on the network to reduce the setup effort needed)
