I have a room with a bunch of https://www.fdlighting.ca/4-slim-led-light-panel-12watts-dimmable-pre-select-5-cct-120v-round-damp-location led pot lights, and I'm hoping to find a way to control a couple individually (specifically, having two off when we're watching a movie, while the rest of the room is dimmed, for example).

They don't appear to be smart from the description I see there, so you would need a controller for each of them if you want to control them individually. Maybe a Shelly that's dimmable. then automation-it.
My plan is to have them all on a Zen72 dimmer, and then I'm hoping I can find something I can put in between a couple of them to setup an automation to fully turn off the ones closest to the TV. The LEDs are new and don't dim nearly as far as I'd hoped and placement isn't ideal. I'll take a look at Shelly stuff and see if something there may do the trick!
