I had a few Sonoff sensors lying around that I didn't use for about 2 years.
When I tried installing them, I had lots of problems but contacting Sonoff I learned, that I need to upgrade these first. I was told, that I need a ZBridge Pro or a USB Dongle Plus 3.0 to achieve that.
As I only had a ZB bridge, I bought the USB 3.0 stick, went to their page, used the online updater to update the sensors, the ZB Bridge and then I could see the TH01 Sensor in HA.

Unfortunately the TH01 sensor looks like being bound to the ZB bridge only, even it should reach the HA connected USB stick perfectly. Both are lying on the same desk.

As soon as the ZB bridge is off, the sensor is not reachable anymore. Trying to re-connect it HA doesn't work. It is now shown as "Connected by Texas Instruments CC2652" but temperature and humidity are shown "unavailable"

How comes?

unpair/remove from old bridge first, as many devices cant be paired if already bound to a diff controller.

Also, zigbee can take a while before every device has sorted itself in the network and reply to coordinator

Okay, could delete the device and pair it again. Seems to have worked.

Very uncomfortable to map certain sensors to certain bridges. That has no fallback in case of a bridge gone missing.
