I haven't messed with MA that much at all tbh, but I was thinking of getting in to it more now. I would be using it for audio and tts responses.
I've read somewhere that the go to method is to delete the Sonos integration from HA and use music assistant entirely for it. Is this still the case? I'm just trying to get proper info etc and was also curious if we still get all the proper entities that the Sonos integration gives.

Yes, that's the recommended way to deal with it. Music Assistant will talk to the Sonos devices, and then MA's Home Assistant integration will expose HA media player entities for each player MA knows about.
If you don't remove the Sonos integration from HA, you'll be confused with duplicate devices :)
It works perfectly fine with TTS/announcements (I have some stuff doing that) and MA gives you some extra controls in its own settings for things like announcement volume and whether to play an tone before announcements.
