Is it possible to make a gradient scale for each of my panels (58) where one shows the energy for the day and the other is the current time power it's producing?

If your panels are reporting that data into HA it's not impossible. Depending on how you want it to look it can be very complicated.
A simple solution I can think of would be a tile card per panel with some modification to show the color per card representing your data.
