I'm hoping to help flesh out the intents in Home Assistant. I was wondering if anyone knows of any lists of utterances for Amazon Alexa, Google Home or Siri for IoT automations.

I haven't seen anything fully comprehensive comparing the platforms, which isn't too surprising given the variety of commands they support and that they're all generally attempting to make interaction more natural, without limiting to predefined phrases. That said, the docs do have a sample across a wide range of use cases:
