Is there a way to, for example, specify which switches, lights, fans get rolled up to the area overview features? For example I have air purifiers I would like to not include in fans or some random light on a device that I don't want to turn off visibility on from everything but don't want the room to show lights on when it is.

You can take a look at the HACS area-card-plus. It allows more customization.
