You can do it with the "custom features" hacs plugin.

Another option that might work: Mushroom fan card.
I say might because it may depend on the supported features of the fan entity. If it is something like 1, you may only be able to turn it on & off. A higher feature number can do more stuff, such as fan speed and oscillation.
