Both of my home assistant voice preview edition devices appear to have broken randomly last night at 3:10AM EDT.
They were just showing a spinning red ring, when I woke up this morning. And after unplugging and re-plugging, now show just one red light on at the front.
How can you debug these things? Anyone else experiencing similar issues?

sounds like it disconnected. possible your router/wifi-ap updated, rebooted, or something. it happens...
as for "single red" I am not sure exactly what you mean.
general suggestion is to reinstall the firmware manually by plugging into PC and using THIS tool to perform the procedure detailed here
as for debugging, you could also access the logs by usb by plugging into pc and using the ESPHome Web Tool to view the logs which may give you some hints.

I think my Wyoming services just went down when one of my servers disconnected briefly. My ESP-Box was helpful as it showed an error on the screen. Thanks for the tips!
On the red light, initially when I woke up it was flashing red in an alternating pattern all around the ring, but when I unplugged and plugged back in, it showed only a single red light at the front of the device opposite the plugs. That might just be mute, not sure?
