I'm a bit lost with zigbee and the smart plug I just buy

I successfully connected my smart plug to my sonoff dongle. I can use the on / off switch on my dashboard but I have 0 on all other info (energy consuption, etc, etc)
Is there something I forget to to the have those info ? I already restart, reconfigure by default and other "die and retry" stuff xD but still nothing

I don't see in the link provided that the smart plug have power measuring capabilities
If you can, buy Ikea ZigBee smart plugs. In Spain, about 10 euros with power measuring. Only 6 euros without it. Nice and reliable

Yeah, can confirm, it's pretty common for switches with Tuya-branded/compatible firmware to seemingly indicate power measuring capabilities to HA, but then not report any actual power usage (or current or voltage, etc) back. So the result you're seeing is basically expected, unless the AliX listing explicitly advertised power usage monitoring.
You can just disable the entities in HA, so they don't end up getting logged/dashboarded

I totally avoid Tuya devices, as long as I can. I gave away the last ones that I had to family and friends

In some cases, you also need to tell the device to enable reporting power data at the frequency you want, and the default is 'never'. Here's an example from Z2M:
