Just moved my HA instance to my VM server located in the garage and want to find out if it is a good and working solution to run the aeotec z-stick Z-wave and a zigbee dongle on a separate RPi in the house and proxy this via zigbee2mqtt and zwavejs2mqtt to the VM server ?

You could get a PoE Zigbee adapter as an alternative, but if you're also running zwave then your solution makes sense since the last time I checked there are no similar zwave adapters

Great, I read in zigbee2mqtt about it not being recommended to run "Be aware that it is not recommended to use a Zigbee Coordinator via a Serial-Proxy-Server (also known as Serial-to-IP bridge or Ser2Net remote adapter) over a WiFi, WAN, or VPN connection." but i guess that is another technique.
