I have deleted my Home Assistant Preview Edition from my old Home Assistant instance. I have reset the devide by long pressing the button. Now I cannot get it to even show up to connect to my new instance. It shoud show using BLE

quickest solution might be to reinstall the firmware.
plug it into your pc and reinstall using THIS tool using THIS procedure

this will hard reset it and allow you to ensure its connected to your network. then your new HA instance should spot it on the network. if not then you will need to get its ip address (probably from your routers dhcp table) and manually add it using the esphome integration

You CAN see it? Then go to Settings - Devices and Services - click "Add Integration", choose "ESPHome", and put IP there.
