Can we block all roborock traffic to their servers and just use HA to control the vacuum locally?

I have a s8 maxv ultra that I'd like to prevent from accessing the internet.

I was wondering if controlling the vacuum through Home Assistant would allow the vacuum to run on scheduled cleanings with out access to the internet.
