Looking to start tinkering with Home Assistant, either with a small home pc server or a raspberrypi. I've seen online some recommendations for combo units, but the recommendations tend to be 3+ years old. Is there a current favorite? Or should I stick to 2 separate dongles?

Even for a smaller setup on the pi? I have small ambitions atm, likely 6 open/close sensors, maybe add 4 more for random tinkering

Go with more than 1gb of memory in any case, so a pi3b is not recommended any more.

I had a Nortek combo dongle, go separate. I now have a HomeSeer SmartStick G8 Z-Wave Plus V2 USB Controller and a SMLIGHT SLZB-06M - Zigbee 3.0 to Ethernet,USB,and WiFi Gateway Coordinator with PoE, all running on a Pi 5 16GB
