#Devices in Zigbee2MQTT are not being "smart" with my mesh network

First off, not sure if this is a hardware or integration issue so feel to point me in the best direction.

I have the following devices: (All Third Reality aka 3R)
2x - Waterleak Sensor
3x - Moisture Sensor (Grass)
4x - Gen2 Smart Plugs

Dongle: SONOFF Zigbee 3.0 USB Dongle Plus Gateway, Universal Zigbee USB Gateway with Antenna for Home Assistant, IoBroker, Wireless Zigbee 3.0 USB Adapter
Amazon: https://a.co/d/0YzLWXn
[Dongle is plugged directly into a RPI5 (USB2.0 Port]

No matter how hard I try, the devices will not connect to the specific router I permit, so I am forced to "Permit all". They are also all connecting to the Coordinator no matter what.

This is causing me to rely on the 3R to be smart, I have heard good things about 3R that is why I am going with them, but open to changing and going with a different brand entirely.

The crutch of the issue, is my LQI is super low on some of the devices. Which I suspect in return is causing me to not receive consistent data from these devices. Specifically with the Sideyard and Frontyard a lot of the time 1 specific entity is not responding.

Any help is appreciated, I have spent a lot of time digging into this and trying to solve it myself.
