I like the Amazon Fire 10 HD Plus tablets (though I think they're discontinued). 10" screen, relatively cheap especially when they were on sale. They have wireless charging and I have the matching wireless stands for them so they sit on end tables and nightstands. (I rent an apartment so mounting the screens to wall wall is not an option.) I used Fire Toolbox to remove the lockscreen ads (which is a cheaper option) and Amazon bloat and install the Play store. I use Fully Kiosk Browser to display the dashboards. There's an integration for FKB so that adds sensors and automation capabilities to HA. (BTW, FKB is essentially free, but you can pay for a license to unlock Pro features. With that said, you can turn on Pro features without paying. It will put a watermark on the screen but this is useful for testing a feature to see if it warrants paying for the license.) I use a smart plug along with an automation to turn on/off the charger so the battery isn't just sitting at 100% all the time. Another automation turns the screen on/off when needed along with a motion detector in respective room. The only thing that I don't like about them is that they do not support tapping the screen to wake it up (hence the motion detector automation.)

I also have a ViewSonic 24" touchscreen with a MiniPC running Windows 11. The MiniPC is connected to the ViewSonic screen and a 50" dumb TV. (The MiniPC has two HDMI ports.) I use Firefox in Kiosk Mode to display the dashboard on the ViewSonic and primarily show Plex on the 50" which I use a wireless keyboard and trackball to interact with it. browser_mod helps with some of the automations for this dashboard.

I put a lenovo m8 hd in the kitchen with fully kiosk and it works nicely
